Sometimes you just feel like having a wedge of iceberg slathered with a thick creamy dressing sprinkled with a few tempeh bacon bits. Here’s what we recommend. It is vegan, oil-free, gluten-free and flavorful.
1 brick silken tofu (about 12 ounces)
1/2 cup soy milk, unsweetened
1/4 cup red wine vinegar or other vinegar
1/4 cup nutritional yeast
2 Tablespoons miso (white)
2 Tablespoons dried Thyme
1 Tablespoons dried basil
1/2 onion, rough chopped
1-2 raw garlic cloves
1/2 teaspoon smoked paprika (optional)
salt and pepper to taste
Blend all the ingredients together. Chill for a few hours. Use as a dip or dressing.
This is a great dressing for those who want a super thick salad dressing. If you find it’s too thick you may thin with a little more nondairy milk.
