Just in time for Saint Paddy’s Day, our REAL Corn-No-Beef-Sweet-Potato-Hash. It’s a savory dish that’s full of sweetness.
6 medium sweet potatoes (diced)
1 large onion (diced)
1 cup frozen corn (organic)
1 Tablespoon minced garlic
1 Tablespoon organic canola oil (optional)
1 teaspoon paprika
1 teaspoon whole fennel seed (coarsely ground)
1 teaspoon whole caraway seed (coarsely ground)
1/2 teaspoon salt (optional)
1/2 teaspoon ground black pepper
1/4 teaspoon ground cloves
Preheat oven to 400oF. Lightly oil a large sheet pan or line with parchment paper.
Scrub the sweet potatoes and chop; about a half inch dice.
Peel, clean and chop the onion; about a half inch dice.
In a large bowl put the diced potatoes, onions and the rest of the ingredients except the corn. Toss with oil, if using.
Pour the potato mixture onto the large sheet pan spreading evenly and bake in the oven for 30 minutes. Remove sheet pan and add the corn giving the mixture a stir. Lower the heat to 350oF and return to the over for 15 minutes or until done. Serve with our quick Sriracha Sauce.
