Fruity Waffles

We love waffles and make them all the time because our recipes are so easy! Gary made these recently and I think they are my new favorite. It’s the added fruit in the batter that makes these waffles so luscious. Fortunately he made a lot and froze the extra ones so we can enjoy them all week long.

1 1/2 cups rolled oats
1 cup all purpose gluten-free Flour (We use Bob’s Redmill)
1/4 cup millet flour
2 Tablespoons ground flax seeds in 1/2 cup water
2 Tablespoon apple cider vinegar
6 to 8 dates
1 orange, peeled and sectioned
1 pear, cored and chopped
2 cups water

Grease and preheat a waffle iron.
In a small bowl beat the flax seeds in 1/2 cup water. Beat in vinegar.
In a blender, add the oats and flours. Pulse to grind oats into a flour and mix the ingredients.
Add the dates, orange, pear, flax seed mixture and 2 cup water to blender. Pulse to incorporate and then blend batter until smooth.
Let set for 15 minutes before pouring batter in the waffle iron.
Cook for about 15 minutes or until waffles are browned and crispy on the outside.

  1. I am upsey by your gluten free recipes. People who are allergic to wheat, wheat germ, wheat bran, and gluten are also allergic to oatmeal.
