This brings me back to the Good Humor Ice Cream Truck and the Creamsicle Pop of my childhood. This is so much better! You’ll need to freeze some oranges in advance.

2 oranges, peeled, sectioned and frozen
1/4 cup raw cashews
1/2 cup plain, unsweetened nondairy milk
1/2 teaspoon vanilla

In a high-powered blender combine the cashews, vanilla and nondairy milk until creamy. Add in oranges and blend well. Serve immediately. Makes 2 servings.

If you don’t have a high-powered blender, that’s okay! You will just need to add enough milk or water to get the ingredients to blend in your appliance. Instead of a soft serve dessert, you’ll make a shake, but it will be just as delicious.
