REAL Vegan-style Meatloaf

When we created the Healthy World Burger I knew that we had the perfect base for a meatloaf. Here it is.

Ingredients

4 1/2 Cups REAL Mixed Cooked Grains (cook together 1 cup millet, 1 cup brown rice or turanicum, 1/2 cup of black rice and 1/2 cup of red rice together and then take 4 1/2 cups of the resulting cooked grain mixture) or cook grains separately and measure out the following:
1 1/2 cups cooked millet
1 1/2 cups cooked brown rice or turanicum/kamut (use brown rice for gluten-free version)
3/4 cup cooked black rice
3/4 cup cooked red rice

Dry Ingredients
(Mix the following dry ingredients in separate bowl)
1/2 cup garbanzo bean flour
1/2 cup rolled oats
1/3 cup nutritional yeast
1/4 cup ground flax seeds
2 Tablespoons parsley flakes
2 teaspoons Herbes de Provence
2 teaspoons porcini mushroom powder
2 teaspoons red pepper flakes
2 teaspoons onion powder
2 teaspoons chili powder
1/2 teaspoon freshly ground black pepper

Wet Ingredients
1/3 cup Aquafaba
1/3 cup water
1/4 cup strained tomato sauce
1/4 cup tamari sauce or soy sauce
1/4 cup apricot butter or other jam or apple sauce
3 cloves fresh garlic (minced)
1 Tablespoon soy lecithin

Preheat oven to 350oF
Grease a loaf pan (about 2 quarts) with 1 to 2 teaspoons of olive oil and set to one side.
Mix the following dry ingredients in separate bowl: garbanzo bean flour, rolled oats, nutritional yeast, flax seeds, parsley flakes, red pepper flakes, onion powder, chili powder, black pepper.
Combine the dry ingredients with the grain.
Mix the following wet ingredients in a another bowl: Aquafaba, water, tomato sauce, tamari sauce or soy sauce, apricot butter or other jam or apple sauce, minced garlic, soy lecithin.
Combine this wet mixture with the grain mixture.
Pour into a large well oiled loaf pan.
Bake, covered with parchment paper for 1 hour in preheated 350oF oven.
Remove from pan by carefully taking out the meatloaf and placing it on a sheet pan lined with parchment paper.
Return to oven and bake an additional 15 minutes.
Remove meatloaf from oven and spoon or brush 1/2 cup of our Meatloaf Tomato Sauce on top, letting it run off the sides
Return to oven and bake additional 15 minutes until the sauce is brown.

Slice and serve with remaining Meatloaf Tomato Sauce.
