Steel Cut Oats and Millet Waffles

I am done with buying flours! I grind my own in my Vitamix. Millet and Steel Cut Oats grind up well and make wonderful waffles. Serve with Berries, Fresh fruit or Jam.

Ingredients
3/4 cup steel cut oats, dry, uncooked
1/4 cup millet, dry, uncooked
2 Tablespoons flax seeds (brown or golden)
2 cups water
1 teaspoon vanilla or almond extract
Oil to grease waffle iron (we use organic canola)

Directions
1. Lightly oil waffle iron and turn on heat.
2. In a high-powered blender, grind the dry ingredients together making a flour.
3. Add in water and extract and blend until incorporated.
4. Pour batter in waffle iron. Cook for 15 minutes or until dry and lightly golden brown.

Waffles may be refrigerated or frozen and reheated in a toaster or oven.

For a richer waffle add 1/4 cup almonds, sunflower seeds or pumpkin seeds to the dry ingredients and grind into a flour.
For a sweeter waffle, add 1/4 cup of raisins or chopped dates to the batter. You can leave the raisins or date pieces for sweet bits in the waffle, or pulse them in into the batter.

  1. This is one of my favorite waffle recipes and I make them often.. Today is Thanksgiving Day and in keeping with the theme of the day, I added pumpkin and cinnamon to the recipe and served the waffles with a toasted pecan maple syrup.

    • We are so happy you love this recipe! We do too. I was so thrilled when I learned I could make my own FRESH flour in my Vitamix. Toasted pecan maple syrup… that sounds too good. Hope you had a lovely Thanksgiving.
