Tofu No-Egg Salad

8 oz block of firm tofu (we used sprouted tofu)
Seed Caesar dressing (about a cup)
1/4 cup finely chopped celery
1/8 of a cup of finely chopped red onion
1/4 teaspoon madras curry
1/4 teaspoon paprika
freshly ground black pepper to taste

Drain the water from the tofu package and then gently pressed it in a clean towel to get out excess water. Smash the tofu with a fork in a mixing bowl. Add the celery, onion and spices and mix well. Add the Seed Caesar dressing and continue mixing. Serve right away or chill before serving. Keeps in the refrigerator of a few days. Garnish with a little more paprika and freshly ground pepper when serving. We don’t use salt because the Seed Caesar dressing is very flavorful.
