What Vegans Eat – Day 10

Breakfast: We like waffles and we have them at least once a week. We have a bunch of different waffle recipes on this website and lately I’ve been making the Buckwheat Waffles. They are simple to make and I love the nutty buckwheat flavor. Gary likes his waffles with syrup. He makes his own, warming up some agave and mixing it with vegan butter.

I usually eat mine plain. This morning I was decadent, topping the waffles with apricot butter.

Lunch: We finished up the leftover lasagna along with a fresh kale and apple salad tossed with a dressing of Dijon mustard and red wine vinegar.

Dinner: There was no official dinner as we were invited to attend the La Fashionista Compassionista Launch party. I had my daily green juice of kale, collards, beets, carrots, celery and lemon and we were off, out into the cold night. It was about 19 degrees outside!

Evening: We got home and were a little hungry. It was a good time for tea (teeccino) and toast!
