What Vegans Eat – Day 1000

Breakfast: We are working our way through the Staffordshire Oatcakes. Again, these are the ones we baked and they are not as lovely as the ones we cooked on the griddle. Live and learn. I wanted to see what the difference would be and I found out. I just won’t do it again! Cooking them on the griddle seems to help them rise. And I love the way the outside gets browned.

After breakfast I went to my parents home who live about an hour’s drive away east of us on Long Island. The plan was to take my dad to a doctor’s appointment. I haven’t seen them for a month since we were in California. My dad is not well and I was a bit anxious to see how he was doing. When I arrived at the house he was sleeping and my mom was in her robe. No one was ready to go to the appointment. I woke my dad and saw how much weaker is he now. He didn’t want to go to the appointment and I told him he didn’t have to. Later, when he got up he told me what he wanted me to do. The battery in his car was dead. A tow truck had come last week to jump start it but the jump didn’t hold. I arranged for a tow truck to come and take me and the car to a service station to get a new battery. It took hours. I never needed a tow truck before and in the last month I have had two cars towed. That’s enough!
 
Dinner: When I got back to my parents’ house I was famished. My dad was asleep and he hasn’t been eating much. I figured I would make a salad for my mom and me and cook some tofu and vegetables. I began dry sautéing a red onion, wondering how to cook the tofu. Normally we bake tofu or put it in soups. A long time ago I used to fry tofu with lots of oil to keep it from sticking. I didn’t want my tofu to stick. I added water to the onions while they cooked to keep them from sticking and decided to use this deglazing technique with the tofu too. I added some herbs and spices: Turmeric, Garlic Powder, Herbes de Provence and Fennel Seeds. Next I tossed in some frozen Vegetables and cubed Tofu. I always kept about 1/4 inch of water in the pan. It made a seasoned broth that helped flavor the tofu. I was very pleased with the results.

My dad got out of bed and was hungry. My mom didn’t know what to make for him, but I did – Mashed Potatoes with Spinach. When I was a toddler I didn’t like eating spinach and my dad suggested mixing it in with mashed potatoes. That was the trick. I realized later on that he liked eating spinach that way. I suggested it and he agreed that was a good idea. He has not been very agreeable lately since he is not well, so it was nice to be able to find something that would please him.
Evening: I’ve been keeping track of the food in my parents’ pantry and refrigerator. I sat down with my mom and we made our first FreshDirect.com order which would come tomorrow. My plan is to do this for them from now on. I noticed there were three Delicious Apples in the refrigerator that had been there a few months. No one was eating them. There were other apples, like Fuji and Gala and they were moving. Not the Delicious variety. I decided to cook them into Apple Sauce. My mom likes her sweets and was frustrated that there weren’t any treats for her. (We selected some in her grocery order.) She appreciated having the Apple Sauce as her evening treat. I did too.
