What Vegans Eat – Day 1014

Breakfast: It was rough spending the night in the hospital. I tried to get comfortable in the reclining chair one of the nurses brought me. There was a lot of activity and noise all during the night and I did not get much sleep. I left the hospital in the morning and went to my parents’ house to rest. They live about a 15-minute drive from the hospital. My sister took the car back to the hospital and I made myself breakfast. I was so hungry! I am filled with gratitude for the Oats that have been nourishing me this past week. This bowl had mixed Organic Frozen Berries, Almond Milk, Almonds and Raisins.

After a bad night’s sleep and the emotional sadness knowing my dad was not going to be around much longer I was feeling sensitive. There was the smell of cooked butter and eggs in the house and it made me sick. I tried to get some sleep but couldn’t get settled. I packed my stuff and drove home. Gary was ready for me. He put me to bed so I could get some rest.
 
Dinner: When I woke there was a feast waiting for me of our favorite foods: Baked Tofu basted with Marinara Sauce, Whole Grain Blend (Red Rice, Black Rice, Brown Rice and Millet), Sautéed Kale with Onions, Purple Skin Sweet Potatoes and Small White Potatoes.

After dinner Gary volunteered to be part of the night shift team with me watching my dad in the ICU. This time, I was able to sleep in the recliner but Gary was the one who suffered. They couldn’t fit another recliner where we were and he made a makeshift bed out of two chairs but it was impossible for him to sleep.
 
Evening:
Tonight’s Family Comfort Cart did not have any tea bags on it. It took a while and a number of phone calls but by morning five herbal tea bags of Cinnamon Apple Tea were found. Gary had made Green Juice at home with Kale, Celery, Carrots, Lemon and loads of Ginger. He froze them and brought them to the hospital. They were ready to drink late in the evening and I was happy to have them along with the organic Granny Smith Apples I remembered to pack.
