What Vegans Eat – Day 1049, Travel Edition

Breakfast: The REAL fast food comes naturally packaged – fresh fruit. We leave tonight for New York and I am frantically trying to finish some projects before we leave. I ate a Banana and some Mandarin Oranges along with Walnuts.

Christmas Dinner: Gary’s sister Deb had been working the last few days creating a feast for Christmas, inviting family members and the neighbors. The neighbors, next door, Mary and Allison prepared Hummus and a plate of Crudités. “It’s all organic!” they told me.

 
In addition to the meats and cheeses, Deb made sure there were plenty of vegan dishes. She made a stew of Garbanzo Beans, Tomatoes, Spinach and Spices. The best part was the creamy Polenta underneath.

 
The table included Deb’s traditional Crunchy Cabbage Salad, Olives, Grapes and Artichoke Hearts.

 
We had a bunch of produce to eat before leaving for our flight home to New York. Gary made a big Salad with all the greens that had to go, along with Tahini and Avocado. I took several plates.

 
Evening: We’re on a red eye flight home. We didn’t eat much, just nibbled on Walnuts, Trail Mix and Mandarin Oranges.
