What Vegans Eat – Day 1098, Travel Edition

Breakfast: We believe in Green Juice. While we can’t make it at home we are grateful to get it anyway we can. Today was in bottles from Trader Joe’s.

 
Lunch:
We were giving a bag of Artichokes from Katie, one of The Music Man co-producer’s. She’s always giving us healthy food. We steamed them up and served them with Millet cooked with Onions and mixed with Black Beans.

 
Snack: An Apple a day… need I say more?

 
Dinner: Gary put together a simple, quick and delicious soup made with low-sodium Vegetable Broth, Yellow and Red Bell Peppers, Sweet Potatoes, Quinoa, Celery and Black Beans. I love Sweet Potatoes in everything these days.

 
I worked late, trying to finish projects before starting a new week of performances on Wednesday of The Music Man. Gary treated me to a quick “Raw Cookie” made with Rolled Oats, Banana, Raisins and Apricots. A food processor would have made the job easier but he put a lot of muscle and love into it which made it extra tasty.
