What Vegans Eat – Day 1099, Travel Edition

Breakfast: It’s our second and last day off from our performances of The Music Man. I am enjoying starting my days with Cacoco Drinking Chocolate. Katie, our co-producer treated me to a box. Gary is not touching chocolate since he is avoiding caffeine, so it’s all for me! I like starting the day with Chocolate.
 
Lunch: When I got really hungry, I looked for leftovers. There were cooked Brussels Sprouts but when I reheated them and tasted them I was disappointed. They had turned. I put them in the trash.

 
In its place, I had a Banana with Peanut Butter.

 
Later on I made a Salad with Baby Spinach, Walnuts and Tahini Dressing.

 
Dinner: We were meeting Gary’s brother, sister-in-law and cousins for dinner at Luna Mexican Kitchen. The serve very tasty Tortilla Chips with Masa Harina that is ground right on the premises. We ordered some Guacamole but there never seems to be enough!

 
Gary and I tried the Veggie Grill Parrilladas with Arroz Verde, Charro or Epazote Black Beans, Sauted Onions, Guacamole, Salsa Fresca and Hand Made Tortillas. The Veggie Grill consists of Carrots, Cauliflower, Red and Green Peppers, Zucchini, Squash, Nopales, Sweet Potatoes and Chipotle Cashew Crema. Nopales are made from the soft pads of underdeveloped prickly pear cacti. They are noted for many health benefits but I didn’t care for the texture very much. I will have to try this food a few more times and keep and open mind about it.
