What Vegans Eat – Day 1129

Lunch: I was visiting with mom today. We have alternate side of the street parking, where cars must be moved on Thursday or Friday from 11:30am-1pm, for street cleaning. It’s a joke really, the street cleaning trucks come through at lightning speed and don’t do anything but make noise and air pollution. But I make it work where I will move the car and drive to visit mom and be back later to grab a spot for the week until it is time to move again. Today I got a haircut first before going to mom’s. I was very hungry when I got there and I made us a big salad of Romaine Lettuce, Red Pepper, Red Onion and Apples.

 
I made a lot of soup so mom could have leftovers. This one had Sweet Potatoes, Yukon Gold and Red Potatoes, Yellow Onions, Celery, Carrots, Corn, Garbanzo and Kidney Beans, seasoned with Herbes de Provence, Turmeric and Garlic Powder. I filled 6 big jars and she insisted I take one home.

 
Dinner: My parking carma has not been good this week! When I finally parked, I was ready for dinner. Gary made Baked Sweet Potatoes and Yellow.

 
We had the soup I made earlier at Mom’s.

 
Gary made his Baked Tofu, seasoned in a new way, with a Mustard-Herb marinade.
