What Vegans Eat – Day 1146

It’s Easter Sunday. Look what the bunny brought! This was one smart Easter Bunny who got his candy from the NaturalCandyStore.com, vegan and gluten-free! The basket had Ocho Organic Candy Bar Coconut Bars, ZOT Organic Licorice Beads, Candy Tree Organic Strawberry Licorice Laces, Amy E’s Bakery Organic Peanut Brittle, CleanCandy® Lemon Drop, CleanCandy® Watermelon Wheel, Theo Organic & Fair Trade Peanut Butter Cups – DARK Chocolate, and Vanilla Cocomels (coconut milk caramels).

 
Breakfast:
We got up late and had fresh Orange Slices.

 
Lunch: Gary was inspired and made a late Easter Brunch of Home Fries and his French Scramble.

 
This is one of my favorite meals.

 
Snack: We had to break into some of the candy. We shared an Ocho Coconut Bar. Okay, that was yummy!

 
Evening: This evening was a two-drink minimum. I was drinking Vanilla Almond Rooibos Tea and a Green Juice with Kale, Collards, Cabbage, Lemon, Celery, Carrots and Ginger.

 
Later we tried the Peanut Brittle. Gary kept reminding me to be careful not to break the brittle with my teeth, rather to let it slowly melt in my mouth. Mm.

 
Gary made a hearty Vegetable Corn Chowder that we enjoyed late in the evening.
