What Vegans Eat – Day 1150

Breakfast: Today was my day to visit Mom. We had a full day planned. I skipped breakfast and was super hungry when I arrived. The house was feeling cold and Mom showed me the thermostat which was at 64o rather than 73o where it was supposed to be. The heater was broken. Thanks to her neighbor we figured out the service we had a contract with to call and two young men came right away and fixed the problem. While we waited for them to arrive I made a big pot of soup for Mom, with Red and Yukon Gold Potatoes, Corn, Peas, Onions, Herbes de Provence, Turmeric and Garlic Powder. I made Steel Cut Oats for my afternoon breakfast and topped it with Raspberries and Blueberries and Almond Milk. Mom has always said she hated Oatmeal but somehow when I make it, she happily gobbles it up.

 
Lunch: Once the furnace was fixed we sat down for soup and shared and Avocado.

 
Dinner: After taking Mom food shopping I drove back to Queens. The Parking Gods were with me and I got a fantastic spot on my first time round the block. Gary was ready with White Bean Tikka Masala that I topped with Mushrooms.
