What Vegans Eat – Day 1155

Breakfast: We are heading out to Costa Rica in a few days. This was my last chance to visit with Mom before leaving. Gary set out our morning breakfast to get me started for the long day: Grapefruit and Rolled Oats smothered with Blueberries and Coconut Milk.

 
Lunch: I brought some of our Millet Croquettes with me to Mom’s along with some other dishes we made for the Food Revolution Summit. I nibbled on one in the car ride over and then we had some for lunch. Mom had hers with some Sauerkraut I gave her a few weeks ago.

 
Dinner: For dinner I had the Red Cabbage Salad with Lemon (recipe given at the 2018 Food Revolution Summit) and Mint and Garbanzo Bean Corn Chowder I brought. Mom doesn’t typically like spicy food but she enjoyed the hot kick in the chowder.

 
Evening: Mom had lots of frozen bananas in the freezer. I couldn’t pass up the opportunity to make her a health and yummy frozen treat – Frozen Bananas, Frozen Blueberries, Almond Milk and Almond Extract. Okay, I made it for me. I loved it. She did too.
