What Vegans Eat – Day 1162, Special Travel Edition

Breakfast: Oatmeal with Raisins and Bananas is always special with fresh, locally grown Pineapple here in Costa Rica.

 
Lunch: I made a Green Cabbage Slaw with Papaya, Onions and a creamy Silken Tofu dressing. We have a mini chopper and blender in our condo. I started with the mini chopped and tried to chop Cilantro, Garlic, silken tofu, garlic and lime juice. Failure! I moved all the ingredients to the blender. Success! Gary added Raisins to his slaw. He likes his slaw sweet. Gary made a sauté with Potatoes, Onions, Black Beans, Tomatoes, Silken Tofu and the leftover Rice and Pineapple we had from yesterday. Another success!

 
After lunch we went over to the pool to swim, workout in the gym and watch the sunset. The sun rises and sets early here.

 
Dinner: For dinner, I made Sloppy Maki, Avocado Maki with White Rice, Avocado, Nori and Tahini for sauce. Gary preferred his all mashed together.

 
Evening: We went back over by the pool area to the restaurant bar for beer. We tried the Pilsen, a Costa Rican beer. The verdict? Not too good! I found it had a bitter aftertaste.

 
After a bit of stargazing, we had a sweet, hydrating dessert on the terrace of our condo before retreating for the night.
