What Vegans Eat – Day 1173

Breakfast: It’s a waffle party this morning. There are plenty of Cherry Almond Waffles from the batch I created yesterday.

 
Lunch: It’s the beginning of the 2018 Food Revolution Summit. Have you signed up to be a part? It’s a 9-day not-to-be-messed event! As I listened to the three interviews with Dr. Greger, Kris Carr and Dr. Fuhrman, I was reading posts and answering questions. Gary served me a delicious bowl when the summit was over, made with Kale, Tempeh, Potatoes, Onions and Tahini Dressing.

 
Dinner: After eating I was off to Mom’s house for some family business with my brother and his family, and of course dinner. There must always be food. We went to P. F. Chang’s and had a wonderful time. They have certified gluten-free dishes and vegan options. The server, Kyle was entertaining and helpful. Three of us got the Buddha’s Feast. Mom loved it!

 
Evening: Gary and I settled in later. I made Strawberry Banana smoothies with frozen Strawberries, Bananas, Soy Milk, Vanilla Extract and Flax Seeds.
