What Vegans Eat – Day 1178

Breakfast: I had to get up early today and that’s not something I like to do. For one, the car was parked in a “Thursday 11:30am-1pm street cleaning” space. I would have to move the car. I decided I would drive over to Mom’s early, tune in to the 7th Annual Food Revolution Summit and then take her food shopping. It was a gorgeous, sunny day. I set my computer up on the patio table outside and made myself a bowl of Rolled Oats, with Blueberries, Walnuts and Almond Milk.

 
It got hot fast so I came inside. Mom was also having the plumber over who supposedly had fixed one of her toilets yesterday. It was still making noise so she called him back. Fortunately, the job was done before the summit started and I could focus on my work, reading and responding to the participants’ comments and questions.
 
Lunch: While I worked, Mom made a big salad and some Edamame Beans. I poured Balsamic Vinegar over my salad.

 
Dinner: When I got home, Gary had gotten started preparing a hearty meal waiting for me: Millet with Peas, Sweet Potatoes and Rancho Gordo Cranberry Beans. Fortunately I had brought home a perfectly ripe avocado which quickly became Guacamole.
