What Vegans Eat – Day 1209

Breakfast: Today, breakfast would be an important meal. It would be hours before I would sit down to eat again. I wasn’t very hungry but I knew I should eat. I made Breakfast Polenta with Raisins and Coconut Flakes. I don’t always have Oats!

 
Snack: I drove about 45 minutes east to my mom’s house to pick her up to take her in the other direction and then north to Croton Falls where my niece was performing in a junior production of the musical Fame (based on the movie). Mom made us some fresh Carrot Juice before we left for an energy boost!
 
Dinner: It was an adorable show. Afterwards, the family convened at Imperial Wok for dinner. I began with Edamame.

 
Next I had a couple of Avocado Rolls. I was not in the mood for any of the stir-fried dishes today. The maki was just right.

 
Evening: I drove mom all the way home. We stopped at Whole Foods on the way back. I needed greens! Once at her house, I made a late meal of Spring Mix Salad with Green Olives, Walnuts, Onions and Tomatoes, tossed with Balsamic Vinegar and topped with a Dr. Praeger’s California Veggie Burger. After that I had a second veggie burger! I was feeling insatiable.

 
We finished with some fresh Pineapple and Cherries.
