What Vegans Eat – Day 1210

Breakfast: I was at mom’s house with a mission. My plan was to clear our my father’s closets, packing all of his clothes to give to charity. He died six months ago and this seemed like the right time. Fortuitously, mom’s friends had invited her out to lunch. This gave me time to do the difficult work without mom getting emotionally involved with each piece of clothing. I made us both Green Juices in the morning with Kale, Carrots, Celery, Lemon and Apples. Normally I don’t put apples in my juice but I knew mom wouldn’t like it without the extra sweetness. She still complained a little but she drank it.

 
Dinner: I pushed through the day finishing just in time for when mom came home. I was famished! I popped a Butternut Squash, a Spaghetti Squash and some Purple Sweet Potatoes in the oven. While they baked I had a Spring Mix salad with Green Olives, Onions, Tomatoes, and Strawberries. The strawberries were a nice touch.

 
I ate a lot of salad and one Purple Sweet Potato and I was full. We’ll get to the squashes on another day.
