What Vegans Eat – Day 121 (Special Travel Edition)

Breakfast: You’ll be seeing a lot of this breakfast this month, rolled oats with fruit and nuts and soy milk. We are staying in a poolhouse with a small refrigerator and are living simply. And it’s simply lovely.

Lunch: I had a lot of work to do, writing and coaching clients. I enjoyed grazing on plain tofu with lemon juice, crunchy celery and peanuts. And Gary brought me a green juice. It was very satisfying.
 
Evening: I was not hungry for most of the day and didn’t want to eat until later in the evening. We had purchased an organic seeded watermelon a few days before and it was time to slice it open. I was so excited to find a watermelon with seeds. Do you remember watermelon seeds??

Still hungry, I made something simple, cold corn tortillas with avocado and cherry tomatoes. It’s all about living simply this month. Simply lovely.
