What Vegans Eat – Day 200

Breakfast: Everything seemed out of sorts since I brought my MacBook Pro into the shop the day before. It’s a 2011 model, the warranty expired and I was nervous about the potential of having to shell out a lot of cash to get it fixed. Fortunately it had a particular video issue that was still covered by Apple at no charge to me. I only had to experience separation anxiety for about 5 days while the laptop was repair. This was day one. Gary nourished me with one of my favorite dishes, a big vegetable noodle soup, with cabbage, carrots, onions, mung bean noodles and a miso broth. I rinsed a pot of black beans that started soaking the night before and got them cooking.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Ginger
 
Snack: I was invited to spend the weekend at Davis Park on Fire Island with my friend Nancy. I packed a frozen green juice for Saturday, a small container of some of the black beans I had cooked earlier, some uncooked brown rice, rolled oats, dried pink lentils, shredded coconut, pumpkin seeds, dates, some Raw Revolution Bars, a frozen container of Creamy Carrot Bisque and some frozen stuffed cabbage along with a few ice packs and some Kukitcha tea. I was off. While on the train out east I nibbled on a Raw Revolution bar.
 
Dinner: The Stuffed Cabbage filled with Chard, Brown Rice, Mushrooms, Basil and Onions was still pretty frozen when I arrived. I cooked it in a frying pan along with the black beans. It made for an easy satisfying, first night on Fire Island dinner.
