What Vegans Eat – Day 231

Breakfast: We’re traveling tomorrow so my goal is clean out the refrigerator with whatever foods I don’t want to go to waste. I finished off the last French Herbed No-Egg Omelette made a few days before with some Jasmine Tea.
 
Lunch: My parents offered to take me out to lunch before traveling. We walked down Austin Street in my neighborhood of Forest Hills to the Agora Taverna. I had never eaten there. It was the outdoor seating that appealed to me. There was a very limited selection of vegan-friendly food. I went for the Grilled Vegetable Medley consisting of a portobello mushroom, bell peppers, asparagus and zucchini with olive oil and balsamic vinegar. We all agreed that the food was pretty mediocre! My vegetables were beautiful in color but they did not have much flavor. Normally I love roasted or grilled vegetables so this was disappointing.

Daily Green Juice: Kale, Celery, Carrots, Ginger, Lime
 
Dinner: Gary and I went out later that evening to see a friend star in his own one-man show. We grabbed some dinner at Joe Allen with some other people from out of town who were going to the same show. We both got the Thai Vegetable Stew made with zucchini, mushrooms, scallions, peanuts, coconut milk, tofu and served with brown rice.

Evening: We were not going to get much sleep, getting up at 3:30am to catch a 6:00 am flight. I finished off the last head of kale and made us some Super Green Power Smoothies to sip on while we finished packing and preparing for the trip.
