What Vegans Eat – Day 242

Breakfast: Why are English Muffins so good? I can’t answer this question. We had gluten-free English Muffins with fresh, organic canteloupe and our favorite schmears and English Breakfast Tea with Soy Milk. We like smashing bananas on our breads, muffins and waffles in the morning. An extra treat is to blend in a nut or seed butter into the banana. This morning I smashed my ripe banana with a little tahini on my muffins and Gary went with peanut butter. MMmmm. Nutella can’t compete tastewise or nutritionally with these simple, whole foods schmears. Try it!

Daily Green Juice: Kale, Celery, Carrots, Ginger, Lime
 
Dinner: It was a rare occasion where we both didn’t feel like cooking and felt like snacking instead. I opened a sample package that I received from Zippy’s Veggie Bites. I’ll be talking to the owner of this new snack food on my next It’s All About Food show. I’ll let you know what I think of these snacks on the October 13 program. Gary opened up the second bag of Earth Balance Aged Vegan Cheddar Popcorn that we got at last month’s VegNews Comfort Food Shindig at Mooshoe’s. It was fun!

Evening: Later on we were craving real food. Gary made a lovely salad that I ate on the couch.

I needed something sweet and an organic apple was the perfect treat.
