What Vegans Eat – Day 277

Breakfast: Stunned and reeling from the news of the attacks in Paris the night before we wanted to find ways to celebrate France and all the good things that have come from the French people. We made crêpes. Buckwheat Crêpes, topped with a Strawberry Coulis and a Crème Anglaise made with homemade silken tofu, sugar, vanilla and almond extracts. This went with a pot of Arbor Teas Vanilla Black Tea. C’était très bon!

Daily Green Juice: Kale, Collards, Carrots, Celery, Lime
 
Dinner: It’s a good feeling to be hungry and ready for a meal. I was feeling very hungry so I was delighted to discover that Gary had prepared some Basmati Rice and Seasoned Adzuki Beans while baking Sweet Potatoes. He defrosted our last jar of Cashew Cheese Fondue, warmed up some Corn Tortillas and voila! A spectacular meal was served and enjoyed.

Evening: Yes, we get cravings for sweet things. I made a quick Strawberry Ice Dream by blending cashews and water, adding in frozen strawberries and a little vanilla extract. It was rich and delicious and hit the spot. I made some I Love Lemon herb tea brewed with 1/2 fresh lime. It was good.
