What Vegans Eat – Day 28

It’s been 4 weeks of What Vegans Eat. What have you learned? What surprised me is how we continue to come up with new recipes, new ways to eat plants, deliciously. Many are simple modifications of our typical meals and some have been amazing, beautiful masterpieces.
 
Breakfast: It’s oatmeal again and that’s good. We love oatmeal. It’s quick, easy, tasty and comforting. By using oats as the base and adding in different fruits, raw nuts and seeds and spices, it keeps the palette interested. This oatmeal was prepared with an apple, a banana, some shredded unsweetened coconut, dried chopped apricots and flax seeds. And as we often say, “this is the best oatmeal I’ve ever had.” It’s a working breakfast as we fuel up and review content for filming the 3rd Episode of the REAL Good News In Review.

Lunch: We used to eat a lot of salads with lettuce – green leaf, red leaf, butter or Boston lettuce, Mesclun Greens and Romaine. But since we have added Kale salad to the menu, those limper greens just don’t seem as appetizing any more. And since they are all about the same price, why not go for the one that gives you more nutrition per dollar? The Lacinato Dinosaur Kale we got this week was especially muscular and “meaty”. I served the Kale Salad with Shredded Carrots, Blueberries and Seed Caesar Dressing in our 7-cup Pyrex bowls. I love these bowls for eating in, serving, storing and cooking. They do everything. I also wanted to show how big our salads are, almost filling the 7-cup container.

Daily Green Juice: Kale, Collards, Celery, Carrots, Black Radish, Lemon
 
Snack: Dark Chocolate and our REAL Chai Tea
 
Dinner: The 7-cup Pyrex bowl appears again today, with our Miso Vegetable soup made with cabbage, onions, scallions, oyster mushrooms, chickpea miso, silken tofu and kombu. Miso soup is just about the easiest to make, and miso gives a rich flavor to the broth and provides probiotics and vitamins. Just don’t boil the soup once the miso is added. It won’t hurt the flavor but it will destroy some of the things that are good for you in it.
