Breakfast: Oatmeal with Pecans, Walnuts, Cinnamon and Soy Milk, served with Genmaicha Green Tea.

Lunch: With my afternoon concert coming up I wanted to be well-fed and energized. We brought more Baked Tofu out of the freezer from Thanksgiving and had it with brown rice and Tahini Dressing. This baked tofu recipe is so spectacular. I’ve really been enjoying having it in the freezer ready to warm up.

Dinner: I came home after singing my concert for the cancer patients at Memorial Sloan Kettering. Entering the hallway to our front door I smelled wonderful aromas coming from our apartment. Gary made dinner which included a variation of his Spicy Marinara Sauce. A Romaine Lettuce Salad was already on the table.

Then we had a Ratatouille-inspired stew with the Spicy Marinara Sauce

Daily Green Juice: Kale, Collards, Cabbage, Celery, Carrots, Lemon
 
Evening: Later while we relaxed to watch the film Mr. Holmes, we had some chocolate So Delicious Ice Cream with Apple Pie. I made a lot of individual Apple Pie tarts for Thanksgiving and it’s fun to take them out of the freezer, heat them up and enjoy them after a long day with some Rooibos Vanilla Almond tea.
