What Vegans Eat – Day 332

Breakfast: It’s an easy breakfast when you’ve made Gooey Apricot Danish the day before. I think this has to be our best quick bread recipe so far. There’s a small market across the street from us that has been selling organic, fair trade fresh blueberries for an incredibly inexpensive price so we have been blueberrying up these days. Blueberries go well with Apricot Danish, and Green Kukitcha tea.

Lunch: Everything went into today’s Kale Salad – leftover Black Thai Peas and Turinacum that we made 2 days before, Red Onions, Wrinkled Black Olives, Blueberries, Pineapple, tossed and massaged with a Balsamic Tahini Dressing.

Daily Green Juice: Kale, Collards, Carrots, Celery
 
Dinner: Sometimes when Gary cooks, it becomes art and seems too beautiful to eat. We call this dish: I didn’t have a backyard to dig a fire pit to cook my vegetables so I baked them in our apartment oven instead.

We each enjoyed our plates with a glass of Anchor Steam Beer.

I spiced up my second plate with Sky Valley Sriracha Sauce.

Evening: We watched the live show of Late Night with Steve Colbert and snacked on bananas with peanut butter and drank peppermint tea. Bananas are good to have at night because they have melatonin in them which helps you sleep.
