What Vegans Eat – Day 425

Breakfast: At my parent’s home, everyone eats differently and eats what they want. I went for my leftovers from our dinner out the night before: Green Tripe Delight (steamed) and Brown Rice. Gary and I had bananas and strawberries and a Trader Joe seasonal black tea flavored with vanilla and spices. My dad brought home bagels which both my parents enjoyed.

Lunch: I dropped Gary off at home and I returned the rental car. It’s always an adventure, taking the bus to the subway to the rental car office and then doing it in reverse to return the car. When I got home from my journey, I was hungry. The flavors were filling the hall when I arrived and I knew Gary had prepared something wonderful. I had recently received a new shipment of dried mushrooms from Fungus Amongus and Gary made me a big Mushroom Miso Soup. There was a spectacular Kale Salad loaded with Walnuts and topped with leftover Spicy Corn Bread which I described yesterday, now made into croutons. We also had Salmon and Cheese. Just kidding! We had sliced Papaya which Gary likes to call salmon since the color is the same. And our “cheese” was soft silken Tofu that I added to my soup. Best of all was the Avocado Pineapple Salad.

Daily Green Juice:: Kale, Collards, Celery, Carrots
 
Dinner: Lunch was so good and there were plenty of leftovers making dinner an on demand repeat performance.

Evening: Teecino and a small piece of Dark Chocolate with Blueberries finished another lovely day.
