What Vegans Eat – Day 448

Breakfast: Now into Day 4 of the Food Revolution Summit. Short on fresh fruit, somehow the morning Oatmeal was spectacular, topped with Blueberries, Pumpkin Seeds and Shredded Coconut. The secret to food tasting especially good is to be hungry! I made a Green Tea with Ginger. I recently dehydrated the ginger fiber leftover from making ginger juice. It’s perfect for tea.

Lunch: Our lunch salad consisted of Romaine, Tomatoes and Avocado, topped with Mint Leaves. I love mint in salads.

Daily Green Juice: With our especially heavy work load this week and out of green juice we are grateful our neighborhood Ripe Juice bar. We ordered a couple of the Achilles mix, with Celery, Spinach, Parsley, Broccoli, Cucumber.
 
Dinner: Bean Craving Alert! It’s been a while since I made beans. I started soaking some yellow splits peas earlier in the day and made a cravings-buster soup with carrots, onions, garlic, parsley, turmeric and black pepper.

Evening: We tried to sleep and couldn’t. We are both too wired from work. We got up for a little Chamomile and a treat – frozen melon cubes, made from watermelon, cantaloupe and honey dew. Sweet!
