What Vegans Eat – Day 45

Breakfast:
There hasn’t been much time for anything this last week or two, including walking to our local stores for fresh produce. Fortunately, we found GoOrganicNYC a few months ago who deliver and we get to customize our box every week. That’s where we get most of our green vegetables. GoOrganicNYC is also one of our Auction Sponsors for our upcoming fundraiser on Earth Day, generously contributing two $100 gift certificates. We tend to get our organic fruits from local stores. We were out of just about every fresh and frozen fruit. No apples, bananas, pears, oranges, grapefruits or berries to be had. But we had lemons. And when life gives you lemons, you can make lemon poppy seed muffins and lemon curd, and serve them with jasmine tea.

Daily Green Juice: Kale, Collards, Celery, Cabbage, Lemon
 
Dinner: After another long day of finishing up our taxes and writing a grant proposal we enjoyed a simple dinner of mung bean soup, garnished with toasted corn tortilla strips and kale salad with our favorite Seed Caesar dressing.

Evening: With the completion of several major projects we deserved a treat! I made buckwheat crepes and serve them with a delicious chocolate sauce I quickly prepared and served along with the lemon curd from breakfast. Chocolate and lemon – so good together.
