What Vegans Eat – Day 451

Breakfast: I skipped breakfast on this busy morning and just went for a Green Tea with Ginger.
 
Lunch: My appetite came around for lunch. We had some Yellow Split Pea Vegetable Soup and Salad tossed with Papaya Avocado Salsa.

Daily Green Juice: We have not had a chance to make juice for this week. We headed over to Ripe Juice Bar for their Achilles containing Celery, Spinach, Parsley, Broccoli, Cucumber.

Dinner: After hearing Dr. Perlmutter mention Jerusalem Artichokes during his interview in the Food Revolution Summit, I was curious about them and picked up a package. I learned that they are a species of sunflower loaded with nutrients, are a great prebiotic, and rich in potassium and iron. – See more at: http://www.drperlmutter.com/eat/brain-maker-foods/#sthash.Ms1sR1mR.dpuf I have never prepared them before, have you? I made a simple Jerusalem Artichoke Soup with potatoes, onions and sage. I added the potatoes to the mix not knowing what the Jerusalem Artichoke flavor would be like. I am glad I did, the flavors went well together. Now I know why this root is called an artichoke. It tastes like an artichoke!
