What Vegans Eat – Day 500: Special Travel Edition

Breakfast: I am loving the fragrant, ripe Plums from the neighbor’s tree. I had a few or breakfast.
 
Lunch: We were meeting Gary’s sister for lunch before her trip to Scandinavia. Khanh’s is the family favorite these days and that’s where we met. I can’t get enough of those Spring Rolls!

Once again, for the second day in row, I had the Lemongrass Tofu. Khanh’s version is different from Hanna’s Bistro. It’s very lemongrassy!

Dinner: Sometime I get a little panicky when I have a lot of fresh food in the refrigerator. I don’t want it to go to waste. There were some veggies I bought at New Leaf almost a week ago and it was time to move them into our bellies. I made a stir fry with Bok Choy, Green Onions, Yellow Onion, Kale and Vegetable Tempeh that I had marinated in Sky Valley Sriracha. I also added in the leftover Cabbage Salad from a few nights before that had Peanuts and Beans Sprouts in it. What seemed like a lot cooked down to a manageable size.

We also had the leftover Tomato/Cucumber Salad merged with Green Beans from two nights ago and the Tomato/Kidney Bean Salad from the night before. I added some fresh Basil to the mix.

Evening: For dessert we had red Grapes and Purple Plums along with some Peanuts and Dark Chocolate Chips.
