What Vegans Eat – Day 557

Breakfast: Today I began the major catchup crunch. I had a long “to-do” list and got started early. Gary served me grapes.

And then I was treated to a cool Smoothie. We have one little air conditioner here in the apartment that we use if really necessary when we sleep. That means it is hot. When it is hot I want cool, hydrating foods. Gary read my mind, or was likely feeling the same way.

Lunch/Dinner: I was still working away at my tasks. Fortunately Gary and I often take turns in the kitchen and he was on it making what he called a Cobb-style Salad. He explained he had made many a Cobb Salad when he managed and worked in restaurants and that the original was a salad based on what was left over or needing to move. That’s how our salad was “Cobb-style”. It consisted of Romaine Lettuce, Tomatoes, Avocado and leftover Gary’s Special from yesterday and Hummus from 2 days ago. This was BIG FOOD that would last all day.

Daily Green Juice: Still not ready to make my green juices so we went to Ripe again for the Achilles made with Celery, Spinach, Parsley, Broccoli, Cucumber.

Evening: We settled in and watch two movie: Black Mass, which was very creepy and an HBO Mike Nichols documentary which was delightful. A fresh Orange was my treat. Gary went for his favorite Peanut Butter and Toast.
