What Vegans Eat – Day 58

Breakfast: We were putting together our music book for the upcoming Swingin’ Gourmets’ performance at the Happy B’Earthday Revue. There’s a lot of craft involved, cutting music, rearranging specific bars on the paper, whiting out and rewriting words. This required some serious oatmeal. Nothing but oatmeal, stick-to-your-ribs kind of oatmeal, would do and lots of strong English Breakfast tea. The day promised to be a long one.

Lunch: Gary prepared a big pot of all-day-long-stew. We had it for lunch and all day long after that! It was made with a rich dark stock, eggplant, onions, tomatoes, small potatoes, peas and special spices. We topped it with a homemade “Moroccan Parmesan” made with pumpkin seeds and spices.

Daily Green Juice: Kale, Collards, Carrots, Celery
 
Dinner: More Stew! It was so delicious I enjoyed having many bowls of it.
 
Evening: I was craving a traditional dish – matzoh with chocolate. I thought I would whip up some chocolate sauce. Unfortunately, I worked too quickly and spilled half of the cocoa powder all over the kitchen floor. The good news? There was enough left over to make sauce. We had it with matzoh and the last cannoli shell along with apples and peppermint tea
