Breakfast: We haven’t had muffins in a long time so I made Lemon Poppyseed Muffins. We served them with Apricot Butter and Peanut Butter as usual, and Bananas. I like to smash and spread bananas on my muffins. We also had English Breakfast Tea.
Dinner: We had a big pot of just cooked Black Beans. What to do with them? We didn’t have tortillas and Gary suggested I make Corn Cakes. We hadn’t had them in a long time! The recipe calls Polenta or Corn Meal but I thought I would use Corn Flour this time. As a result, I needed to add more water to the batter. I also added chopped scallions. I made a beautiful stack of them.
I asked Gary if he could make a sloppy sauce and he got right to it. He made it with Chili Lime Carnitas Jackfruit, Onions and Tomato Paste. I also cooked up a pot of dried mushrooms for me.
There you have it! And we ate it all up.
