What Vegans Eat – Day 601

Breakfast: It was hard getting up in the morning after a fun, late evening out. Gary had to get to his acting class at HB Studio and I could sleep in. Only I couldn’t sleep. So I had to struggle through the day. But it was a GREAT day! Ten years ago I was diagnosed with advanced ovarian cancer, and here I am, ALIVE! There’d be plenty of time to catch up on sleep, later. It’s time to live, breathe, work and play. Gary left me a pot of Vanilla Black tea, all wrapped up and cozy, staying warm, along with a lovely note. Mm. I grabbed a few Almonds and Cacao nibs to get me started.
 
Lunch: Incredibly hungry, I wait for Gary’s returned. We finished up the Lasagna, and smothered it in Cauliflower Béchemel. That was yummy.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Ginger.
 
Dinner: We were pretty weary in the evening but wanted something nice and light. Gary made a Miso Soup with Tofu, Wakame, Mushrooms for me and Brown Rice Noodles, and I cracked open the Red Cabbage Sauerkraut I started last week.
