What Vegans Eat – Day 628

Breakfast: We slept in as late as we could. We had no fresh produce and we were out of oats. But we had Corn Thins. Gary whipped up a fresh batch of Apricot Butter. It’s so good when it’s warm, it’s like caramel. I made a big pot of English Breakfast tea. It’s always lovely to come home and make tea. I had made a lot of distilled water before we left so it was there to make the prefect cup of tea. We sorted through a week’s worth of mail and got started catching up on newspapers and magazine.

Daily Green Juice: It’s such a lovely gift to give your self when you make a lot of green juice and freeze them in individual containers. I defrosted two, one for each of us. We needed them, made with Kale, Collards, Celery and Ginger.
 
Dinner: Gary did a quick shopping and bought some Romaine heads and a few other things. From what seemed like nothing came a three-course meal! Salad with Little Seed Caesar Dressing to start.

I defrosted the Creamy Cauliflower soup we had made before we left. It was wonderful – rich and flavorful.

I prepared some Porcini mushrooms for me, along with Spinach and Corn to go with Brown, Black and Red Rices. I kept mine rather simple. Gary mix his up using more of the Cauliflower Soup as a cream sauce and topped it with nutritional yeast, salt and pepper.

Evening: We had not had Vanilla Almond Rooibos tea for a long time. At least it seemed like forever. We had a pot and finished up a small piece of Vegans Treats Peanut Butter Bomb that was left in the freezer.
