What Vegans Eat – Day 634

Breakfast: Saturdays are often Waffle Days here at Responsible Eating And Living headquarters. We went for the Light and Crispy Oat Waffles and made a discovery. We’ve been making these waffles for years and they don’t always come out the same. I think it has to do with whether or not we oil the waffle iron and how much oil is used. When there is a lot of oil, the waffles tend to get crispier and have holes in them, which is what happen this morning. But they were tasty and we served them with Bananas and Apricot Butter.

This is what happens after the bananas are smashed into the waffles and apricot butter swirled on top. Don’t they look good? I like the way they match the plates!

Lunch: Green Zenphony for lunch? Why not? Okay sure! And that’s how it happened. Gary got the Veggie Beef Chow Fun.

I went with my first Green Zenphony favorite with a twist – the Veggie Roast Duck Noodle Soup. I asked to have the Brown/Red rice mix in place of the white rice noodles. Now it is truly perfect.

Tea Break: We just got a new delivery from Arbor Teas and it’s always fun to brew up a pot. Vanilla Black Tea is the best. I had mine with Coconut Milk and Gary chose Cashew Milk.

Daily Green Juice: Kale, Collards, Celery, Carrots
 
Dinner: We didn’t think we’d be hungry after our lunch out but late in the evening I had to eat something! Gary made me one of my all time favorite comfort food dishes, Spinach and Mashed Potatoes.
