What Vegans Eat – Day 642

Breakfast: We had planned to get up very early and pick up a car rental that we would use until we left for the airport in a couple of days. But when the alarm went off we both agreed to delay the car pickup until noon. We needed more rest. Once up, I spied the one remaining serving of Buckwheaties. I had it with Soy Milk and Blueberries and Bai Mu Tan tea. Gary wasn’t hungry so he started the day with Irish Breakfast Tea.

Lunch: We picked up the rental car and drove to White Plains. We were meeting my childhood friend Elyse and her husband Michael. It was lovely to spend time with them, catching up and sharing our thoughts about the election results. Elyse had put out some tasty things for us to nibble on – Brussels Sprouts, a vegan spicy dip, Hummus, Guacamole, and little bites of Celery with Nut butters. We walked along the main street by their apartment and decided to have lunch at Haiku Asian Bistro. Gary and I shared the Lettuce Wraps with Tofu and Pine Nuts.

We also shared the Avocado Maki and Vegetable Maki which had Sundried Tomatoes in them. The food was excellent.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
 
Dinner: After a long day, we settled in and had the remaining Split Pea Soup, with mine loaded up with Mushrooms.
