What Vegans Eat – Day 670

Breakfast: We had rented a car the day before to drive to the party in Irvington. Today was another day on the road. We drove east on Long Island to pick up my parents and then back past our home in Queens to go North to Cross River, NY. We were going to hear my niece play viola in the Westchester/Putnam Youth Symphony at John Jay Middle School. Gary and I enjoyed a luscious cup of Irish Breakfast Tea with Cashew Milk before hitting the road.
 
Lunch: Fortunately there was no major traffic and we got to Cross River an hour early. We were all very hungry. There was a little shopping complex near the school. There was an Asian Bistro, a Dunkin’ Donuts, a Pizza place and a Salsa Fresca Mexican Grill. My dad doesn’t like Mexican-style food and he went into the pizza place to order a hero sandwich. He brought it over to Salsa Fresca where Gary, my mom and I each ordered the Aztec Garden Bowl (hold the cheese, please) with beans, rice, roasted vegetables, avocado, cilantro and corn. It was fabulous. I appreciated the helpful woman behind the counter who answered all my ingredient questions.

I learned that Salsa Fresca is a chain and they have an environmentally-friendlier mission than most other fast food establishments.

I was about to text my brother and his wife to let them know we were nearby having lunch, when my sister-in-law and nephew walked in. What a coincidence! We got to spend a little time with them before the main event.
 
Dinner:
After the concert, we were going to meet my brother’s family for dinner out, but it was starting to snow and we had a long drive so we went back to my parent’s home and stay there for the night. I had a bowl of Rolled Oats with Almond Milk, Walnuts and Raisins for an easy dinner. It was good, especially since I missed my oats for breakfast. We also had Trader Joe’s Vanilla & Cinnamon Black Tea. I don’t usually have black tea at night but this particular tea never keeps me awake.
