What Vegans Eat – Day 679

Breakfast: It’s snowing on my cereal everybody! Flaked coconut always makes me think of snow on a hill. This was a hill of rolled oats, blueberries, flax seeds and soy milk.

Lunch: We were having people over in the evening to discuss a music project. They were coming over after the dinner hour but we wanted to have some food ready in case someone was hungry. I suggested making Carrot Lentil Soup, with fast cooking red lentils. Gary made it his way, adding celery to the mix. We had a couple of bowls for lunch.

Daily Green Juice: Kale, Collards, Cabbage, Celery, Lemon
 
Dinner: While I was recording my IT’S ALL ABOUT FOOD show with Steven M. Wise and Ashley Melillo, Gary cooked up a bunch of food, “just in case.” He made Baked Tofu, Sweet Potatoes, Quinoa and reheated the remaining Grilled Vegetables from two days before. Our guests were late, with traffic and parking problems so we had plenty of time to eat. I wasn’t very hungry and took a small plate.

Tea: Our guests weren’t hungry but they were up for tea. We made a big pot of Organic Rooibos Chai from Arbor Teas.
 
Evening: Later on after everyone left, I nibbled a little more on the dinner food. I took the red onion skin and celery that Gary had used for “flavor” when he baked the Sweet Potatoes. I don’t think they were meant for eating. I chewed on them, and they very flavorful – delicious in fact, but chewy, all fiber. Too chewy to really eat.
