What Vegans Eat – Day 698: Travel Edition

Breakfast: The big rain storm everyone’s been talking about has arrived in the South Bay. We sat in the poolhouse, staying cozy with our Earl Grey Tea. I made a big pot of Polenta with Coconut, Raisins and Apples. While we sat, eating, sipping and working, the power went out. We kept cozy by the fire and continued to work, thanks to our charged computer and cell phone batteries. The power was only out for about a half hour.

Lunch: We met Gary’s sister and brother-in-law at Khanh’s for lunch and had the usual, starting with Tofu Rolls.

I had the Vegetable Combo and Gary went with his Rice Vermicelli favorite dish with Tofu and Vegetables.

Daily Green Juice: Afterwards we spun over to Whole Foods for our daily Campbell Blends. While we were there we found Corn Thins, “the perfect vehicle for schmears”. I can’t tell you how excited that made me. It’s a great food to have in the pool house where we have limited refrigerator space.
 
Dinner: We are still getting used to the time change and the weather. It’s zapped our energy. I ate the remaining half of a Whole Foods “Make Your Own” Burrito from a couple of days ago and Gary finished up the morning’s Polenta.
 
Evening: Gary brought up a bag of dried apricots to the big house and he made our favorite Apricot Butter. We watched the Golden Globes with our favorite treat – Corn Thins with Peanut Butter and Apricot Butter. Mm.
