What Vegans Eat – Day 747: Travel Edition

Breakfast: Gary gave me the day off. He was spending the entire day helping costume our Fiddler on the Roofcast and then loading the set into the theater. Since we open on Thursday and I will be conducting 6 shows, I needed to reenergize. I decided to make a bunch of food to have for a few days. I cooked some millet and used some for our breakfast, adding in Bananas, Apples, Raisins and Cinnamon.

Lunch: The night before I had washed and soaked some Red Lentils. I found if I don’t let lentils soak a long while then I will have a lot of gas. Rinsing and soaking over night and rinsing again before cooking really helps. The lentils were cooked with Red Onions, Garlic and Smoky Paprika.

Dinner: I was not expecting Gary back until midnight. I took another bowl of Red Lentil soup and made a big Spinach Salad with Red Pepper and Balsamic Vinegar. While I was eating I was invited up to the main house where everyone was gathering for dinner and to watch the Academy Awards.

Gary’s cousin’s Nancy had made some Sprouted Brown and Red Rice with Broccoli. I took a bowl of that. There was a lot of other food but it had been a Red Lentil Day for me and my belly was full.
