What Vegans Eat – Day 753: Travel Edition

Breakfast: We leave for New York in ten days. We are starting to run out of the few food items we’ve stocked, like raisins. So this morning’s Rolled Oats had Dried Apricots, Bananas, Apples and Vanilla Soy Milk. I like West Soy’s unsweetened soy milk made with just soy beans, water and vanilla. Somehow with the vanilla flavor it tastes rich and sweet.

Lunch: It’s a two performance day everybody! After the matinée performance Gary and I ducked out and went to the Falafel Drive In for Falafel Sandwiches.

Dinner: Two shows a day is tough! Fiddler on the Roof is a long show, about 2 1/2 hours. I am conducting the show and my arms are getting a big workout! We got back to the pool house and Gary made a variation on vegan Paella with Millet instead of Rice, plus Black Beans, Tofu and Arugula.

Evening: We can’t go to sleep without our evening hot drink. Tonight it’s Lavender Mint Tea.
