Breakfast: It’s been fun getting up, doing some exercise, and getting ready for the Food Revolution Summit this week. After my yoga routine (I am following an old video series from Bryan Kest, Power Yoga), I quickly prepared my breakfast to enjoy while working during the Summit. I prepared a bowl of Rolled Oats, Cashew Yogurt, Cacao Nibs, Apples and Bananas and made a pot of Darjeeling. I was ready!
Lunch: Gary had a nice late lunch ready for me when the summit was over – Romaine Lettuce Salad with Tahini Dressing, and the last of the Vegan Pho he made a few days ago.
Daily Green Juice: Kale, Collards, Celery, Carrots, Parsley
Dinner: Checking in on Facebook and online news sources we were reading all of the devastating news about the House of Representatives voting to repeal the Affordable Care Act; replacing it with something that lacks thought, compassion and financial sense. We thought we would walk off the bad news and go to Green Zenphony for dinner. They were out pf Pea Pod Leave, but had some fabulous Chinese Broccoli instead, crunchy and juicy!
I chose a Stuffed Squash dish that was a delicious as it was beautiful.
Gary was comforted with his favorites – the Veggie Roast Pork Noodle Soup…
… and the Veggie Pork Spare Ribs Appetizer.
The restaurant is about a 20 minute walk from our apartment and I like having to walk before and after a meal.
