What Vegans Eat – Day 835

Breakfast: I woke up in a total panic. I had set my alarm for 8:30am. I don’t usually use an alarm but I had an appointment to prerecord an interview with Phillip Wollen at the Progressive Radio Network Studio at 11am. I had originally scheduled the appointment for 9:30am and forgot that it had been changed for a later time. I scrambled quickly to get ready and get on a subway to be there in time at 9:30am. Gary was standing by to help me as I spun around the apartment. Then I remembered the appointment was at 11am. I stopped and took a breath. I had plenty of time. Gary made Oatmeal with Raisins and Apples as I tried to calm down.
 
Lunch: The meeting with Phillip Wollen was amazing. He shared many stories that filled my eyes with tears. The interview will air on June 27 and you must tune in! I came home famished and made a big Kale Salad with Red Onions, Olives and Tahini Dressing.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
 
Dinner: I snacked on an Apple and Banana as I prepared a very simple meal – Cranberry Beans and my favorite rice mix of Brown, Red and Black Rices. They were remarkably color-coordinated! We enjoyed a little OKO Pinot Grigio too.
