What Vegans Eat – Day 839

Breakfast: We invited my parents over for Memorial Day Brunch and to celebrate Gary’s birthday which was yesterday. Gary and I made our favorite brunch foods: French “Eggs”, Home Fries, Buckwheat Waffles, Blueberry Pear Compote, Almond Yogurt, Grapefruit and Field Roast Apple Sage Sausage. My mom brought cut fruit: Strawberries, Oranges and Pineapple. We took the grapefruit away from my parents when my dad remembered they couldn’t eat them since they are both on a statin drug. Gary and I enjoyed them and there would be more for us later on.

Lunch: Later in the day, after my folks had left I went for a simple clean bowl of Cranberry Beans and Mushrooms.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
 
Dinner: We nibbled on the brunch leftovers. I took a small bowl of “Eggs and Sausage.”
